I scored some Kahuku sea asparagus at the Mililani Farmers Market this morning. These veggies are hydroponically grown in sea water, thus naturally salty and bursting with ocean flavor. I LOVE them but they’re pricey (around $6 or $7 at Foodland) so it’s worth heading over to the farmers market where they are fresh and only $4 a pack.
Some sliced locally grown tomatoes, Ewa sweet onion, Nalo Farms cucumber (all from the farmers market) is all it needs for a delicious crunchy salad. No salt needed, but I like to add some olive oil and let it sit for at least several hours for the salt from the sea asparagus to work itself into the rest of the salad.
For lunch, with daikon miso soup and rice.
