Party Prep!

Our little girl will be turning one soon! She is a lucky girl because she’ll get not one but two parties – an intimate family one tomorrow, and another on Maui next weekend. My father-in-law is handling the Maui one, but I’m in charge of tomorrow.

It will be a casual, intimate BBQ with mostly family members, but prepping food for 16 is still hard work. Originally when planning the menu, I had wanted to make everything myself but this week was just super busy so in order to save my sanity I bought mostly everything. Which was the right decision because I just finished prepping and it’s already 11pm. I felt bad for Nomz that even her birthday cupcakes are store bought but then I remembered this is a zero year old. Hmm, are we even letting her eat cupcake? Maybe just a little bite…

The menu inspiration is “an all-American BBQ”. Since there will be lots of kids, I chose hamburgers and hot dogs as the main items so I only needed a few accompanying dishes. Prep work consisted of cut and plate only – no cooking involved!

And my go-to recipe, black bean and corn salad, all ready to be mixed tomorrow morning with frozen corn:

Fingers crossed for sunny but breezy weather tomorrow!
