Arugula Mac Nut Pesto

Sunday morning: the fridge is empty, but a quick search through the pantry yields basics like pasta, olive oil and garlic. In the yard I have my overgrown arugula, desperately in need of a trim. No pine nuts, no problem – we’ve got mac nuts. After all, this is Hawaii.

Arugula Macadamia Nut Pesto

A big bunch of arugula with the optional addition of basil
1/2 Cup olive oil
1/2 Cup macadamia nuts, lightly roasted
1/2 Cup parmesan cheese
Fresh garlic
Salt and pepper to taste

Blend arugula, mac nuts, garlic, olive oil. Stir in parmesan cheese. Salt and pepper to taste. Add more olive oil as needed to reach desired consistency.

    I really like pesto with different leaves/nuts. I haven’t tried arugula but it sounds tasty!

      The arugula pesto was nice and nutty with a hint of bitterness, but unlike basil, it doesn’t have too much flavor, so it’s one pesto that needs some kind of additional topping on top, like tomatoes, or shrimp. What other variations of pesto have you tried? Please share if you have any recommendations!
