Wheatberry and Edamame Salad

A super salad packed with whole grains and protein, for when you’re in the mood to be good.

1 cup Wheatberries
Edamame, cooked and shelled
1 Can black beans, rinsed and drained
Tomatoes, diced
Onion, diced

Cook wheatberries in a pot of salted water for 50 min-1hour and drain. Mix with veggies, and season with olive oil, red wine vinegar, salt & pepper.

    cool! where did you buy the wheat berries?

      I bought mine from Whole Foods, in the bulk section where you fill your own bag. I want to say my cup of wheatberries cost around a buck!

    Salad looks great except for the beans (not a big fan). 😉

    What exactly are wheatberries?

      Wheatberries are the whole wheat grain, before it gets processed into flour, etc. A little chewy and crunchy, a bit like barley or quinoa.
