Corned Beef Pot au Feu

One of hubby’s favorite dishes is corned beef and we found a good sale at Times this week. About halfway into it I add large chunks of vegetables and simmer ever so gently so the vegetables retain their shape.

And here it is, two and a half hours later. With a spoonful of dijon mustard, this dish is the perfect comfort food.

    Wow, that picture of the meal ready to eat looks EXACTLY like how my grandma makes her corned beef! 🙂

    Do add the spices or do you buy it prepared. I need instructions because I mosdef want to try making this!

      Hey Keith – hope all is well!
      The corned beef usually comes with a small packet of spices included (can’t see it from the outside but when you cut the package open it’s in there) and then I add a bay leaf or two. Easiest dish ever!
