Thanksgiving Prep

My favorite eating day of the year! This year’s Thanksgiving dinner will be at Sister-in-law #2’s (SIL2) newly purchased house in Mililani. Mother-in-law (MIL) is here from Maui too.

We’ve been assigned dessert and yam duty so I’ve been baking all day.

I decided to try a random recipe I found online for dessert: Pumpkin Crunch Cake (you can find variations of it on all major sites like cooks.com , food.com, and cdkitchen.com) . It’s an interesting concept because you pour the pumpkin filling in the pan first, then sprinkle a package of cake mix and crushed nuts over it, then drizzle with butter. Here’s what it looked like entering the oven:

and here’s what the finished product looks like. I was expecting a nice layer of custard pumpkin on the bottom, with a crunchy cake layer top, but it looks like the pumpkin soaked up all the cake mix. We’ll have to taste it for the verdict.

    Totally want the recipe for that crunch cake. Is it on the net?

      Hi – thanks for commenting. Yes, it’s all over the net. Just search “pumpkin crunch cake” on cooks.com or food.com. There are many variations, but the basics are the same: layer of pumpkin custard, a bag of cake mix, a whole lot of melted butter, and pecans. Love your blog – your photos are so beautiful!
