Maui Eats – The Flatbread Company

The Flatbread Company is located right on the main road that runs through Paia, a town filled with history and charm. They serve up flatbread pizza made from organic ingredients and baked fresh in an 800-degree clay oven. Although the restaurant is part of a mainland based company, the company’s philosophy focuses on fresh, safe, sustainable food and this Paia restaurant uses as many local ingredients as possible. These include greens from Kula Farm, local basil, rosemary, pineapple, tomato, avocado, goat cheese from the famous Surfing Goat Dairy and ice cream from Maui’s own Roselani brand.

We were still full from breakfast at Gannon’s so we ordered a pizza to go and nibbled on it while we continued cruising on to Upcountry Maui. Here’s the Coevolution Pizza ($19.75 for 16 inch) with a combination of mozzarella and goat cheeses then topped with kalamata olives, onions and sweet peppers. What made this pizza for me was the fragrance of organic Maui rosemary that filled the air when we opened up the box. The thin crust was crisp at parts, but also had a nice chewy texture throughout and a crunchy sprinkle of cornmeal on the bottom. Just lovely!

They have a great selection of vegetarian pizzas, as well as a vegan pizza in addition to favorites like nitrate-free sausage and free range kalua pork. If you’re ever in Paia, it’s definitely worth stopping over at The Flatbread Company for lunch.
